Creamy Baked Vegetable in White Sauce and Cheese| Easy Vegetable Casserole Recipe

This is an easy and quick cheese baked vegetable recipe. It is delicious and so creamy in texture. I loved it so much. This creamy baked vegetable in white sauce is a recipe I've been preparing for ages now and it would've only been right to post it here. You can make this baked vegetable recipe in microwave using the microwave's convection mode too. The temperature and timings would remain the same.
This is a baked vegetable with cheese recipe and it is always good to make it for lunch or dinner or even a party. I have shown how to make this baked vegetables in white sauce step by step for your ease. It is also possible to make these baked vegetables in white in microwave as I mentioned earlier.   • Oil- 4 tbsp
  • Carrot- 1/2 cup (chopped)
  • Beans- 1/2 cup (chopped)
  • Brocolli- 1/2 cup (chopped)
  • Mushroom- 1/2 cup (chopped)
  • Green peas- 1/2 cup (boiled)
  • Sweet corn- 1/2 cup (boiled)
  • Butter- 2 tbsp
  • All purpose flour- 4 tbsp
  • Salt- according to taste
  • Black pepper powder- 1/2 tsp
  • Milk- 2.5 cups
  • Bread slices- 5 to 7
  • Italian seasoning/ oregano - to season
  • Mozzarella cheese- to spread over the top of the casserole 

Method to prepare cheesy baked vegetable casserole:

  • Take oil in a pan, add garlic and saute it until golden brown. Then, add rest of the veggies and cook them for a couple minutes or until the water they release is all evaporated. Keep them aside.
  • Now to make the white sauce, in the same pan, take butter and let it melt. Then, add all purpose flour and cook it on low flame for 2 minutes or until golden brown in colour. Add milk to it and keep stirring in order to avoid lumps. Cook on medium flame for 1.30 to 2 minutes. Then, add salt and pepper to season and whisk it.
  • Add the white sauce to the sauteed veggies and mix well. 
  • Now take water, dip a bread slice in it and squeeze water out of it. Then, place the bread slice on a plate. Do it for all the slices of bread.
  • Now take an oven safe dish, add the veggies mixed with white sauce to it. Grate a generous amount of white sauce over it. Place the bread slices on the top. Season it with some italian seasoning or oregano.
  • Bake it at 180C/ 350F for 20 to 22 min. After baking, the top should be crisp and golden brown in colour. Serve hot.
