Chocolaty, soft and moist snickers cupcakes with whipped cream frosting is the dessert that I was wishing to have for a long time. I made them a long ago and filmed a video too, but couldn't post because I was unwell and spent two days on the hospital bed and the rest of the week on my bed. I wasn't able to stand or sit for a long time, but now as am getting well, I finally edited the video.

I had an Easter cupcakes video all ready to be uploaded a day before Easter, but that's the day I was admitted so couldn't do much with the video and it is lying on my laptop, edited and ready to be uploaded but now Easter has gone... this was such a disappointment for me! 

Coming back to this delicious sweet treat now..

Things you'll Need:

  • Flour- 1 cup
  • Powdered sugar- 3/4 cup
  • Snickers (75g)- chopped
  • Cocoa powder- 1/4 cup
  • Baking powder- 1 tsp
  • Baking soda- 1/2 tsp
  • Vanilla extract- 1 tsp
  • Salt- a pinch
  • Vegetable oil- 1/4 cup
  • Curd- 1/2 cup
  • Milk- 2 tbsp
  • Chocolate syrup- for garnish

For frosting:

  • Whipping cream- 1/2 cup
  • Powdered sugar- 2 tbsp
  • Vanilla extract- 1/2 tsp

Recipe:




Making the cupcakes:

  • Preheat the microwave/ oven at 180°C.
  • Take curd in a mixing bowl, add in sugar and whisk them. Then, add in vanilla extract and oil. Whisk all the wet ingredients.
  • Now, take a sift and sift in flour, cocoa powder, baking powder, baking soda and a pinch of salt. Give the dry ingredients a gentle whisk and add all the milk. Whisk it until a smooth batter is formed. 
  • Pour the batter in greased cupcake moulds (I used silicon moulds). Bake them for 20 to 22 minutes.
  • After they're baked, cool them for 10 to 20 minutes before icing.

Frosting:

  • Take 1/2 cup cream in a bowl and whip it with an electric or hand whisk lightly until it is frothy.
  • Add in powdered sugar and vanilla extract at this point and whisk it till it reaches soft peaks.
  • Then, fold the cream with a spatula to make sure that all the sugar is combined.
  • Take the frosting in a piping bag. I used a 2 d nozzle, you can use any nozzle you prefer or just scoop out a dollop of whipped cream on the top of each cupcake.
  • Garnish the cupcake frosting with some chopped snickers and drizzle some chocolate syrup on the top.
  • Chill for about 10 minutes before serving.
